Ingredients:
2 large eggs
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder
1/4 teaspoon cumin powder
Salt to taste
1 tablespoon of oil
2 tablespoons finely chopped onion
2 tablespoons finely chopped tomatoes
1 green chili, finely chopped (optional)
2 tablespoons chopped coriander
Mango Pickle (for serving)
Cabbage Slaw (for serving)
Instructions:
Beat the eggs in a bowl until fried. Add turmeric powder, red chili powder, cumin powder, and salt. Mix well to combine.
Heat oil in a non-stick frying pan over medium heat.
Add the chopped onions and fry till they become transparent.
Add chopped tomatoes and green chilies (if using). Cook for 2-3 minutes until the tomatoes are soft.
Pour the beaten egg mixture into the pan and swirl it around to create an even layer.
Cook the omelette over medium heat for 2-3 minutes or until the bottom is set.
Gently flip the omelet using a spatula and cook for another 1-2 minutes until the other side is cooked.
Transfer the omelette to a plate and garnish with chopped coriander leaves.
Serve masala omelette hot with mango pickle and cabbage slaw.
To make Cabbage Halwa you will need:
1 cup finely chopped cabbage
1 small carrot, chopped
1/4 cup chopped cucumber
2 tablespoons of mayonnaise
1 tablespoon lemon juice
Salt and pepper to taste
Directions for Cabbage Slaw:
Combine the shredded cabbage, shredded carrot and sliced cucumber in a bowl.
In a separate small bowl, whisk together the mayonnaise, lemon juice, salt and pepper.
Pour the dressing over the cauliflower mixture and toss well to coat.
Let the cauliflower slaw sit for 10-15 minutes to allow the flavors to blend.
Serve cauliflower slaw with a masala omelette as a refreshing side dish.
